In my house black beans are a staple in my food every single day. Eating vegan most of time means you need to fill your belly with lots of fresh fruit, vegetables, fiber, legumes, whole grains, and protein daily. Black beans are incredibly healthy for digestion, regulating blood sugar, cardiovascular health, cancer prevention, and nervous system health. You really can’t go wrong.
Yes, beans get a bad rap because of bloating and gas. There are ways around this. First, if you are making beans from scratch be sure to soak them in water overnight; this helps tremendously. Second, pop a Beano 30 minutes before you eat. Third, take two teaspoons of organic cider vinegar after you eat.
Here’s my recipe:
Heat 2-3 tablespoons extra virgin olive oil in a pot
add 1/2 – 1 chopped onion (depending on taste) and 3-5 cloves chopped garlic
stir and season with garlic salt and black pepper to taste
cook this until the onions become clear
add 1 large can or 2 small cans black beans (I like Goya)
heat through, season to taste and you’re done!
I use these in my vegan tacos (recipe to follow tomorrow). You can scramble some eggs, put those in a whole wheat tortilla, put some salsa on them, some black beans, and you have a great breakfast burrito!
