Vegan veggie tacos

This recipe is full of fabulous flavors and colors. Even if you’re not vegan I think you’ll find it delicious!!

Prepare black beans (recipe found on my blog)
Prepare chick peas
– drain and rinse. Add 1/2 cup water for large can and add 1 packet of taco seasoning. Heat on low.
Chop red cabbage, cilantro, and lettuce. Combine in bowl with squeeze of fresh lemon. (You can add fresh onion or anything else you choose.)
The above ingredients can be prepared ahead of time and stored.
Slice up some tomatoes. I like compari tomatoes because they’re sweeter, but you can use any type. Remember to never store your tomatoes in the refrigerator.
Slice up some avocado.
Layer or combine all these ingredients in a bowl. Add some freshly ground pepper and another squeeze of fresh lemon and enjoy!!

I do not add any tortilla or any extra carbs to this dish since 2/3 of the chick peas’ calories come from carbohydrates. Yes, they are packed with incredible goodness but if you consume too much, especially if you’re trying to lose weight, they will counter what you’re trying to accomplish.
